The grapes are fermented in barrel for around 14 days during which time the fermenting must is stirred by hand several times a day. Each barrel is a micro-vinification, independent of the others. The result is a wine which is extraordinarily powerful yet soft, very round and well-balanced.
Grillo SP
This is El Grillo y La Luna’s most special wine. The plot of Cabernet Sauvignon from which it comes is ploughed by horse, resulting in better oxygenated and less compacted soil. It also undergoes a complete fermentation process.
