Grillo stands apart because it undergoes an unusual and unique winemaking process.
This includes the working of one hectare of our vineyards by horse, picking the grapes entirely by hand, then sorting them one by one, fermenting the wine in French oak barrels (classified by plot and grape variety) and carrying out the malolactic fermentation in new French oak barrels (80% of Grillo is new barrels and 20% previously used barrels). This gives us powerful yet exquisitely soft wines.
Because of its elegant, distinctive and very aromatic wines, the winery is considered to be one of the best in Somontano.
Its range consists of Grillo, Canto Cri-Cri (barrel-fermented Chardonnay), Hop-Hop and Súper Grillo, the winery’s top wine.
